Ingredients

  • 3 tablespoons fresh lime juice, divided
  • 3 tablespoons olive oil
  • 1/4 teaspoon sea salt
  • Pinch fresh ground pepper
  • 4 cups cooked wild rice
  • 1 small fennel bulb, very thinly sliced
  • 1/4 medium red onion, very thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chopped fresh cilantro
  • 3/4 cup chopped toasted pecans

Instructions

  1. In a large bowl, whisk together lime juice, olive oil, salt and pepper until well blended. Add remaining ingredients; toss to coat. Let salad stand for 15 minutes or up to 24 hours. Bring to room temperature and stir in the pecans just before serving.

Notes

Make the rice more flavorful by using vegetable or chicken stock in place of water for the cooking liquid.
