Strawberry Rhubarb Frozen Pops | BourbonAndHoney.com

Slightly sweet and super fruity, these frozen pops are frosty and refreshing!

Ingredients

  • 2 cups strawberries, stems removed and cut in half
  • 3 cups rhubarb (about 3 stalks), cut into 1/2 inch pieces
  • 2 cups water
  • 1/2 cup sugar
  • 1 tablespoon fresh lime juice

Instructions

  1. In a saucepan over medium heat, combine the strawberries, rhubarb, water and sugar. Bring to a simmer and cook for about 15 minutes, stirring frequently. Remove from the heat, stir in lime juice and set aside to cool slightly.
  2. In a blender, process until smooth. Divide the mixture evenly between popsicle molds or paper cups. Place sticks in popsicle molds. Freeze 8 hours, or until firm.
  3. To remove popsicles, run warm water on the outside of the popsicle form until it releases.
