Ingredients

  • 1 pound bulk spicy Italian sausage
  • 6 small red potatoes, cut into 1/2-inch pieces
  • 1 cup chopped onion
  • 2 cloves garlic, finely chopped
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 1/4 teaspoon salt
  • Pinch of pepper
  • 3 cups chicken stock or broth
  • 4 cups chopped kale
  • 2 cups half-and-half
  • 1 cup whole milk

Instructions

  1. In 3-quart saucepan or Dutch oven, cook sausage over medium-high heat 6 to 8 minutes, stirring frequently, until no longer pink. Drain well on paper towels; set aside.
  2. In same saucepan, mix potatoes, onion, garlic, thyme, bay leaf, salt, pepper and chicken stock. Heat to boiling. Reduce heat to low; cook uncovered about 10 minutes, stirring occasionally.
  3. Stir in sausage and kale. Cook 5 to 10 minutes, stirring occasionally, until potatoes and kale are tender. Stir in half-and-half and milk; cook just until heated through, about 5 minutes.
