  • 3 tablespoons butter, melted
  • 3 tablespoons brown sugar
  • 1 tablespoon chunky or creamy almond butter
  • 1 egg yolk, lightly beaten
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • Pinch coarse Kosher salt
  • 3/4 cup chopped dark chocolate

Instructions

  1. Heat oven to 350ºF. In a medium bowl, whisk together the butter, sugar, almond butter, egg yolk and vanilla until well blended.
  2. Add the flour, baking soda and salt to the wet ingredients, and stir until just mixed. Fold in the chocolate chips.
  3. Drop the dough by tablespoonfuls 2-inches apart on a parchment lined baking sheet.
  4. Bake for 10 to 12 minutes until the edges are set and light golden brown.
