Small Batch Chocolate Chunk Cookies

Alright, ‘small batch’ might be a little misleading. But, it’s all relative right? This tasty recipe makes just 10 totally addictive cookies. More than enough for two with a serious sweet tooth, but not too many to have around the house for a few days.

An extra pinch of salt sprinkled on the dough just before baking and a bit of almond butter are optional but they give this chocolaty treat a roasted, sweet-salty flavor and crunch.

A quick and easy small batch recipe for ooey gooey Chocolate Chunk Cookies with a bit of almond butter and a sprinkle of salt to cure any sweet tooth.

Ingredients

Scale
  • 3 tablespoons butter, melted
  • 3 tablespoons brown sugar
  • 1 tablespoon chunky or creamy almond butter
  • 1 egg yolk, lightly beaten
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • Pinch coarse Kosher salt
  • 3/4 cup chopped dark chocolate

Instructions

  1. Heat oven to 350ºF. In a medium bowl, whisk together the butter, sugar, almond butter, egg yolk and vanilla until well blended.
  2. Add the flour, baking soda and salt to the wet ingredients, and stir until just mixed. Fold in the chocolate chips.
  3. Drop the dough by tablespoonfuls 2-inches apart on a parchment lined baking sheet.
  4. Bake for 10 to 12 minutes until the edges are set and light golden brown.
