  • 2 teaspoons vegetable oil
  • 2 to 3 pounds pork shoulder roast, trimmed
  • 8 cups chicken or beef stock
  • 3 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 4 cloves garlic, finely chopped
  • 2 tablespoons sambal oelek
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper

  • Ramen noodles (seasoning packets discarded), hard cooked eggs, fresh basil, cilantro, green onions, carrots, daikon radish, jalapeños, black sesame seeds

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the pork shoulder and brown on all sides.
  2. Add the pork, stock, soy sauce, rice vinegar, garlic, sambal, lime juice, fish sauce, sesame oil, ginger, sugar and pepper to a 4- to 5-quart slow cooker. Cover and cook on low for 8 to 10 hours or on high for 5 to 6 hours or until the pork is tender.
  3. Transfer the pork to a cutting board. Using two forks, break the pork into bite-size chunks, removing and discarding any large pieces of fat. Strain the broth through a fine-mesh sieve into a bowl and discard the solids. Return the pork and broth to the slow cooker and season to taste.
  4. Cook the ramen noodles according to the package directions. Divide pork, broth and noodles between bowls and garnish with all of your favorite toppers.
