Roasted Cauliflower Steaks topped with Gruyere cheese. An easy and delicious veggie side dish.

  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 1/2 teaspoon coarse Kosher salt
  • 1/4 teaspoon freshly cracked pepper
  • 1/4 cup shredded Gruyère cheese

Instructions

  1. Heat oven to 425ºF. Remove outer leaves from the cauliflower keeping the stem intact; cut into 1/2-inch thick slices. Place the cauliflower in a single layer on an ungreased baking sheet. Drizzle with olive oil. Sprinkle with salt and pepper.
  2. Bake 25 to 30 minutes, gently turning once halfway through, until browned and crisp tender.
  3. Sprinkle with Gruyère cheese and bake an additional 5 to 8 minutes longer to melt the cheese.
