Salty, crunchy and pan fried, these spicy garlic peanuts are a great snack recipe for happy hour, game night or your next party!

Ingredients

  • 2 whole heads garlic
  • 1/4 cup peanut oil or high heat vegetable oil
  • 2 pounds shelled raw Spanish peanuts, with skins
  • 8 spicy dried chilies, slightly crushed, seeds removed (chiles de árbol or chiles pequín)
  • 1 tablespoon coarse Kosher salt
  • 2 tablespoons fresh lime zest
  • 2 tablespoons fresh lime juice

Instructions

  1. Separate the heads of garlic into cloves. Trim off the root ends, but don’t peel them. Keeping the skins on will prevent to cloves from burning.
  2. Heat the oil in a large heavy bottomed skillet over medium heat. Add the peanuts, garlic and chiles; cook 10 to 12 minutes stirring constantly until the peanuts are browned. Add the salt, lime juice and lime zest and toss to coat well. Pour into a serving bowl and serve warm or at room temperature.
