These mini zucchini muffins are sweetened with banana and brown sugar and packed with chopped dark chocolate for a sweet treat.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup packed brown sugar
  • 1/3 cup milk
  • 1/4 cup butter, melted and cooled
  • 1 1/2 teaspoons vanilla extract
  • 1 1/3 cups freshly grated zucchini
  • 1/2 cup mashed banana (1 medium banana)
  • 3/4 cup chopped dark chocolate or semi-sweet chocolate chips

Instructions

  1. Heat oven to 350°F. In a large bowl, stir together flour, baking soda, cinnamon and salt; set aside. Lightly grease 36 mini muffin cups with butter or spray with cooking spray.
  2. In a large bowl, whisk together the egg and brown sugar until smooth. Add in milk, butter and vanilla, whisk until smooth. Stir in the zucchini and mashed banana. Gradually add in the flour mixture, stirring until just combined. Fold in the chocolate. Divide batter evenly among muffin cups, filling each about two-thirds full.
  3. Bake 12 to 15 minutes, or until golden brown and tops spring back when lightly touched. Cool 5 minutes; remove from the pan to a cooling rack.
