These loaded sweet potatoes are packed with fresh toppings for an easy and healthy weeknight meal or a delicious brown bag lunch.

  • 4 medium sweet potatoes
  • 1 avocado, pitted and sliced
  • 1/4 cup grape tomatoes, halved
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sliced green onions
  • 1 jalapeño or serrano chile, thinly sliced
  • 2 tablespoons pepitas
  • 1 lime, quartered

Instructions

  1. Heat the oven to 375°F. Prick the skin of the sweet potatoes with a fork and place them on a baking pan. Bake about 1 hour, or until soft. Cool slightly, about 15 minutes. Cut the potatoes along the top to open and fluff with a fork. Top with avocado, tomatoes, cilantro, green onions, chiles, pepitas and a squeeze of lime.
