Green Smoothie Bowl

As we wrap up the holiday, I’m left looking forward to the new year with a full belly and a warm heart.  But, after all the hearty meals of the last week or so, I’m in need of a food break, a reboot of sorts. This week I’ll be sipping sparkling water, gobbling down leafy greens and getting back into a bit of a healthier food routine. This green smoothie bowl is one of my favorite wholesome on-the-go breakfasts. It’s a quick, easy and delicious way to stick to all those resolutions that we’ll be making next week.

Kale makes it green, banana, coconut and mango make it delicious! Top this bright green smoothie with whatever tasty garnishes you have on hand, like almond butter,  sliced kiwi or banana and any nuts or seeds in the cupboard. Pour it into a cup for breakfast on-the-go or into a bowl for a snack or healthy treat.

This kale and mango Green Smoothie Bowl is topped with fresh and tasty toppings for a healthy pick-me-up.

Ingredients

Scale
  • 2 cups chopped kale or spinach
  • 3/4 cup unsweetened coconut or almond milk
  • 1 frozen banana, cut into chunks
  • 1/2 cup frozen mango chunks
  • 1 ripe persimmon, sliced (peeled if desired)
  • 2 tablespoons toasted almonds
  • 2 tablespoons unsweetened toasted coconut flakes
  • 1 tablespoon goji berries
  • 1/2 teaspoon raw hemp seeds
  • 1/2 teaspoon bee pollen (omit if eating vegan)

Instructions

  1. To a blender, add kale, coconut milk, banana, and mango. Blend until smooth and pour into a bowl.
  2. Top smoothie with sliced persimmon, almonds, coconut, goji berries, hemp and bee pollen.
