Garlicky, herby and delicious, this Rosemary Focaccia Bread is soft, rich and chewy and perfect for pizza crust, snacking or sandwiches.

Ingredients

  • 5 tablespoons olive oil, divided
  • 1 1/2 cups warm water
  • 1 1/4 teaspoons salt
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon instant yeast
  • 1/2 shallot, thinly sliced
  • 1 clove garlic, thinly sliced
  • 1 tablespoon fresh rosemary leaves, chopped
  • Pinch coarse Kosher salt

Instructions

  1. Using 2 tablespoons of the olive oil, generously grease the bottom of a 9″ x 13″ baking sheet or baking pan.
  2. In a large bowl, using a wooden spoon, stir together remaining 3 tablespoons olive oil and all remaining ingredients until well blended, about 60 seconds. Scoop the sticky batter into the prepared pan, cover, and let it rise at room temperature for 60 minutes, or until it’s puffy.
  3. When ready to bake, heat oven to 450°F. Firmly poke the dough all over with your index finger. Sprinkle the shallot, garlic, rosemary and salt on dough.
  4. Brush the top lightly with olive oil and place in the oven. Immediately, reduce the oven temperature to 375°F and bake 30 to 35 minutes or until golden brown.
  5. Cool on a cooling rack 5 minutes before turning out from the pan onto a cooling rack. Use a spatula or butter knife if the bread sticks a bit. Serve warm or at room temperature.
