Super easy no bake grab and go granola bars full of nuts, seeds and dried fruit. A great snack or quick breakfast recipe!

  • 1 cup assorted nuts and seeds (pecans, walnuts, almonds, pepitas, sunflower, flax or sesame seeds)
  • 1 1/2 cups rolled oats
  • 1 1/2 cups rice crisp cereal
  • 1/2 cup assorted dried fruit (cranberries, blueberries, cherries, raisins or goji berries)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup brown rice syrup or honey
  • 1/4 cup peanut butter or almond butter
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350°F. Line 8-inch square cake pan with parchment paper. Spread nut and seeds out on baking sheet with sides and bake 8 to 10 minutes, stirring once until golden and fragrant.
  2. In a large bowl, combine oats, cereal, toasted nuts and seeds, dried fruit, cinnamon and salt.
  3. In small microwaveable bowl, stir together brown rice syrup and peanut butter. Microwave on High 30 to 45 seconds, stirring every 15 seconds or until melted and stirred smooth. Stir in vanilla.
  4. Pour brown rice syrup and peanut butter mixture over oats; stir until well coated. Spoon and spread mixture into prepared pan. Press mixture very firmly into pan until compacted evenly. Cover bars with a layer of parchment and place a heavy object on top of the bars. Press again evenly and very firmly to fully compress the bars. This will help hold the bars together with you cut them. Place pan in the freezer for 30 minutes or until firm.
  5. Remove bars from pan by lifting up the parchment paper and place on a large cutting board. Cut into 4 rows by 6 rows to make 24 small bars.
  6. Wrap bars individually in plastic wrap and store them in a resealable plastic bag in the refrigerator for 1 week or store in the freezer for up to 1 month.
