  • 2 cups gluten-free old fashioned oats
  • 2/3 cup coconut flakes
  • 1/2 cup chopped almonds, toasted
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3/4 teaspoon sea salt
  • 3/4 cup unsweetened coconut or almond milk
  • 1 egg, slightly beaten
  • 1/3 cup honey or maple syrup
  • 3 tablespoons coconut oil, melted
  • 1 banana, sliced
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries

Instructions

  1. Heat the oven to 350°F. Lightly grease a 12×7 or 13×9-inch baking dish.
  2. In a large bowl combine the oats, coconut flakes, almonds, baking powder, cinnamon, and salt.
  3. In a medium bowl, combine the coconut milk, egg, honey and coconut oil and whisk to combine. Add the almond milk mixture to the oat mixture and stir to combine.
  4. Layer the bananas, strawberries and blueberries in the bottom of the baking dish and spoon the oatmeal mixture on top. Bake immediately or cover and refrigerate overnight.
  5. Bake 40 to 50 minutes or until the top is crisp and the middle is set. Let stand 10 minutes before serving. Top with whipped cream or maple syrup if desired.
