An irresistible Thai-inspired spicy snack!

Ingredients

  • 4 cups whole raw cashews
  • 5 dried small red chiles, stemmed and seeded, roughly chopped
  • 5 fresh or dried kaffir lime leaves, roughly chopped
  • 2 tablespoons melted coconut oil
  • 1 1/2 teaspoons ground ancho chiles
  • 1 teaspoon coarse Kosher salt
  • 1/2 teaspoon sugar

Instructions

  1. Heat oven to 325°F. In a medium bowl, combine all of the ingredients; toss to coat.
  2. Spread cashew mixture in an single layer on a large baking sheet lined with parchment paper.
  3. Bake 16 to 20 minutes, stirring every 5 minutes or until cashews are light golden and fragrant.Cool completely.
