Fresh and colorful, this tomato and mozzarella salad is an easy and delicious appetizer that’s party ready in just 15 minutes.

Ingredients

  • 24 slices (1/4 inch thick) baguette French bread
  • 1 container (16 oz) ciliegine mozzarella (cherry-size mozzarella balls)
  • 1 pound mixed fresh tomatoes, cut into bite-sized pieces (about 4 cups)
  • 1/4 cup thinly sliced fresh basil leaves
  • 3 tablespoons olive oil
  • 1 tablespoon white balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Heat oven to 325°F. Place bread slices on an ungreased cookie sheet; brush lightly with olive oil or butter. Bake 6 to 9 minutes or until crispy, turning once during baking; set aside.
  2. In a medium serving bowl, gently toss remaining ingredients and serve. Serve with crusty bread.

Notes

The white balsamic vinegar helps to keep the bright colors of the tomatoes, but you can also use balsamic vinegar or leave it out all together.
