Brown Butter Roasted Cauliflower with Gremolata

Roasted cauliflower with browned butter and fresh gremolata. An irresistible vegetarian side dish.

  • Cauliflower
  • 1 tablespoon oil
  • 1 head of cauliflower, leaves removed
  • 1/4 cup butter, softened
  • 1 teaspoon kosher salt
  • Gremolata
  • 1/4 cup chopped parsley
  • 3 tablespoons chopped green onions
  • 1 tablespoon chopped mint
  • 1 clove garlic
  • 1 tablespoon grated lemon peel

Instructions

  1. Heat oven to 425°F.
  2. Brush oil over cauliflower. Place the cauliflower in a medium cast iron or oven-proof skillet. Roast the cauliflower for 45 minutes. Remove from the oven and spread the soft butter over the cauliflower; sprinkle with salt.
  3. Roast the cauliflower for another 5 to 10 minutes or until cauliflower is tender and deep brown.
  4. Meanwhile, in a food processor, place parsley, green onions, mint and garlic. Cover; process until finely chopped. Spoon mixture to small bowl; stir in lemon peel.
  5. Serve cauliflower with gemolata.
