Fresh mint, fennel and pomegranate seeds give this colorful cabbage slaw a bright wintry flavor.

  • 1/2 medium red cabbage, thinly sliced (about 4 cups lightly packed)
  • 1 large firm tart apple, thinly sliced
  • 1 small bulb fennel, finely sliced
  • 3/4 cup pomegranate seeds
  • 3 tablespoons chopped fresh mint
  • 2 tablespoons finely sliced green onions
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt
  • Pinch fresh pepper

Instructions

  1. In a large bowl, combine the cabbage, apple, fennel, pomegranate seeds, mint, green onions and parsley. In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, salt and pepper. Pour the dressing over the cabbage mixture and toss to coat.
