Easy Smashed Cucumber | BourbonandHoney.com -- This flavorful and super Easy Smashed Cucumbers recipe is a great way to use up all that summer bounty of garden veggies!

We’ve been buried this week in fresh backyard veggies! With all the negative things going on in the world this week, a bumper crop of veggies is a welcome distraction. The kitchen has always been my happy place and creating recipes is like a meditation for me. So, if you need me anytime soon, you know where to find me!

This is a *super* easy recipe that will use up some of your cucumber stash and help you get out a bit of aggression along the way!

Smashing the cucumber may seem a little weird but there’s a method to the madness. It helps to quickly get all that delicious flavor into the cucumber without having to soak them. Give it a light salting and let it chill for a bit to get rid of any excess liquid then toss it with whatever flavorful ingredients you and on hand. If you don’t have an English cucumber, the small Persian cucumbers are great, or peel the thick skin from pretty much any cucumber and you’re good to go! Happy smashing!
