  • 1 cup uncooked white rice
  • 1 pound raw shrimp, peeled and deveined (thawed and patted dry if frozen)
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • Pinch ground chili powder, cumin, cayenne pepper, salt and pepper
  • Fresh parsley, for garnish

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, In a medium bowl, toss together the shrimp, olive oil, garlic, chili powder, cayenne, salt and pepper; to coat evenly. Marinate for 10 minutes or up to 8 hours.
  3. Heat the skillet over medium heat until thoroughly heated. Add the marinated shrimp and cook, tossing occasionally for 4 to 5 minutes or until cooked through. Add a tablespoon or two of water or stock to create a sauce.
  4. Serve shrimp over rice with the sauce, garnished with parsley.
