When my sister and I were kids we used to LOVE Easter. It was the holiday that marked the end of a long cold winter and the beginning of spring but it also meant a new dress and if we were lucky, a new pair of sparkly shoes.

Our family had a tradition of waking up early on Easter morning to go on a hunt for little plastic eggs stuffed with trinkets and candy. But, we didn’t have to look very hard. The Easter bunny always left tiny footprints in piles of flour that just happened to be sprinkled all around the house.

That crazy bunny would take detours around the house, through cabinets, behind the couch and out into the garage. We always ended up back in the kitchen where we’d find Mom with a pair of bunny ears, a big smile and giant baskets brimming with chocolate bunnies, jelly beans, new socks and a colorful ties for rocking my side pony tail.

With such sweet memories, I can’t help but always crave something sweet in the spring when I plan for our Easter celebration. So, put your bunny ears on, rock that side pony tail and let’s make something sweet!

These dark chocolate dipped coconut macaroons are the perfect combination of indulgent coconut with a crispy outside and tender inside and I just can’t get enough of them! They come together in a matter of minutes and freeze like a dream so you can make them now for your party next month. But you should probably make a double batch so you have some left to freeze!

The two types of coconut might seem weird but they help to keep the macaroon from being overly sweet while still giving it tons of texture. Cream cheese is my not-so-secret secret ingredient that gives these little gems their soft, chewy inside and rich flavor.

With double the coconut, these dark chocolate dipped coconut macaroons have a deliciously chewy inside and crispy outside for the perfect sweet treat!

Ingredients

Scale
  • 1/2 cup sugar
  • 1 tablespoon water
  • 2 teaspoons brown rice syrup
  • 1/2 teaspoon vanilla extract
  • 1 bag (14 oz) sweetened shredded coconut
  • 1 1/2 cups finely shredded unsweetened coconut
  • 3 ounces cream cheese, softened
  • 2 egg whites, slightly beaten
  • 1/2 cup chopped dark chocolate

Instructions

Heat the oven to 325°F. Line a sheet pan with cooking parchment paper.

In a small saucepan, combine the sugar, water and brown rice syrup. Heat the mixture to boiling, stirring constantly. Reduce heat; simmer 30 seconds to 1 minute, stirring constantly, until the sugar is dissolved. Remove from heat; stir in vanilla extract.

In a large bowl, combine sweetened coconut and 1 cup of the unsweetened coconut. Pour the hot sugar mixture over the coconut. Beat with a hand mixer on low speed until well mixed. Add the cream cheese and beaten egg whites and beat on low speed until blended.

Place the remaining 1/2 cup unsweetened coconut in a small bowl and wet your hands slightly with water to keep from getting sticky. Scoop the dough with a rounded measuring tablespoon and firmly shape the mixture into a ball. Roll in the coconut to coat and place on the prepared sheet pan.

Bake 30 to 40 minutes or until golden brown. Very gently move to a cooling rack and cool completely, at least 30 minutes. The macaroons will be very tender when warm.

Meanwhile, in a small microwavable bowl, melt the dark chocolate on high for about 1 minute or until melted; stir until smooth. Dip the bottoms of each cooled macaroon into the melted chocolate. Place on parchment or waxed paper until chocolate is set. Store in tightly covered container at room temperature or freeze in an airtight container for up to a month.
