Chocolate Sandwich Cookies with Vanilla Buttercream Filling

Dunked in milk or devoured by the plateful, cookies are one of my favorite treats! Luckily, the holidays are packed full of tasty cookies of all kinds.

These tender chocolate sandwich cookies are filled with a fluffy buttercream frosting for an irresistible take on the classic cookie but they’re so much better than the store bought option!

Ingredients

Scale
  • Chocolate Cookies
  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 2/3 cups all-purpose flour
  • 1/2 cup unsweetened baking cocoa
  • 1/8 teaspoon fine sea salt
  • Buttercream Filling
  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Heat oven to 350°F. In large bowl, stir 1 cup butter and 1/2 cup powdered sugar until well blended. Stir in flour, cocoa and salt until well mixed. If necessary, knead with hands to form a soft dough.
  2. Roll dough into small balls with 1 teaspoon of dough. Place 2 inches apart onto ungreased parchment lined cookie sheets. Flatten slightly.
  3. Bake 7 to 10 minutes or until set. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.
  4. Meanwhile, in large bowl, beat 1/2 cup butter with electric mixer on medium speed until well blended. Beat in 3 cups powdered sugar, milk, vanilla and salt on low speed until fluffy and creamy.
  5. Spread frosting between cookies.

      Thanks Thalia!! I have a soft spot for Oreos too but hate all the stuff in them. This is an indulgent version that I don’t feel bad about eating!
