Salted Almond Chocolate Chunk Cookies

Do you ever get a craving for something and can’t think of anything else but that one thing until you get it? Well, these almond chocolate chunk cookies are that thing that I’ve been thinking about, dreaming about and drooling over for the past few weeks. I finally got around to whipping up at batch and it was totally worth the wait!

I was looking for a tender cookie studded with chocolate, lots of almond flavor and a touch of salt. The double almond flavor comes from the almond butter and the almond meal making this sweet snack delicious and gluten free.

These gluten free chocolate chunk cookies are perfectly chocolatey, almondy and delicious.

Ingredients

Scale
  • 1/2 cup creamy almond butter
  • 1/4 cup butter, softened
  • 1/3 cup brown sugar
  • 1 egg
  • 1/4 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3/4 cup almond meal
  • 2 ounces chopped dark chocolate
  • Flaky sea salt

Instructions

  1. Heat oven to 350°F. Line a cookie sheet with parchment paper.
  2. In a medium bowl, beat together the almond butter, butter and sugar until well blended. Add the egg, baking powder, vanilla extra and almond meal mix until blended and dough forms. Fold in the chocolate.
  3. Scoop dough by measuring tablespoonful onto the prepared cookie sheet, about 2-inches apart. Sprinkle flaky sea salt on top of the cookies.
  4. Bake 10 to 12 minutes or until golden on the edges and the top is set. Cool on cookie sheet 2 minutes before transferring to cooling rack to cool completely.
