You all know that I love to host a good party! Last minute happy hours, elaborate dinner parties and weekend gatherings are totally my jam. Not that I ever need a reason to host a party but this time, I’ve got a great one, WE JUST OPENED A STUDIO! Sorry for all the yelling, I’m just so darn excited! I’ve been a bit off-the-grid for a while as I made the wild and crazy transition from corporate life (with B&H on the side) to my own business and studio space, Quincy Street Kitchen.

I’ve partnered with an amazingly talented graphic designer and we recently launched Quincy Street Kitchen, a studio space in NE Minneapolis for recipe development, photography, video, strategy and design. We love food and we love working with other companies and small businesses that do too. On to the tasty part! I’ve got a quick appetizer recipe for you so you can celebrate with us! These garlic marinated olives, oh-my they’re so good! You can throw them together in a matter of minutes and they’ll be politely waiting for your last minute happy-hours in the fridge for days!

The recipe starts with some deliciously salty olives and tosses them in a mix of fennel, fresh citrus, ginger and garlic. Give it all a few hours to mingle and marinade before serving. You’ll never go back to serving just plain olives ever again!

I found a great mix of olives in the refrigerated section of Trader Joe’s but if your local grocery store has an olive bar, that would be a great option too.

These Orange, Fennel and Garlic Marinated Olives are the ultimate addition to a cheese tray and the perfect snack recipe since they’re ready in just a matter of minutes and can be stored in the fridge for last minute snack-attacks.

  • Yield: 1 1/2 cups 1x

Ingredients

Scale
  • 1 1/2 cups mixed unpitted olives
  • 1/4 cup thinly shaved fennel
  • 1 small clove garlic, thinly sliced
  • 4 thin slices fresh ginger
  • 2 (4-inch) strips fresh orange peel (removed with a vegetable peeler)
  • 1/8 teaspoon crushed red pepper flakes
  • 1 cup extra-virgin olive oil

Instructions

  1. Drain and rinse olives to remove brine; set aside. In a medium bowl, stir together all remaining ingredients.
  2. Add the olives to the oil mixture. Cover and marinate at room temperature for 2 hours or refrigerate for up to 5 days. Let olives come to room temperature before serving as the olive oil will thicken in the fridge.

Notes

My favorite mix of olives is a 10 ounce tub at Trader Joe’s in the refrigerated section. Or, check out the olive bar at your local grocery store for a custom mix.
