  • 2 tablespoons peanut or vegetable oil
  • 1/2 teaspoon whole Szechuan peppercorns, toasted and crushed
  • 2 tablespoons garlic, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon chili paste
  • 1/2 teaspoon sugar
  • 1 1/2 pounds green beans, trimmed
  • 2 green onions, thinly sliced

Instructions

  1. In a medium skillet over medium-low heat, cook 1 tablespoon of the oil and the crushed peppercorns stirring frequently about 1 minute, or until fragrant. Add garlic, soy sauce, ginger, chili paste and sugar and cook an additional 1 minute until sugar is dissolved; set aside.
  2. Heat oven to broil and adjust the oven rack to the highest position. In a large bowl, toss green beans with remaining 1 tablespoon oil and arrange in a single layer on a baking pan. Broil 2 to 5 minutes, or until blistered and lightly charred.
  3. Spoon the ginger, garlic and peppercorn mixture over the green beans and toss to coat. Serve garnished with green onions.
