  • 1 English hothouse cucumber
  • Pinch of salt
  • 3 green onions, thinly sliced
  • 1 tablespoon unseasoned rice vinegar
  • 2 teaspoons soy sauce
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon toasted sesame seeds
  • 1/2 to 1 teaspoon red pepper flakes
  • Sesame seeds, if desired

Instructions

  1. Cut the cucumber in half lengthwise, then cut into quarters crosswise. Turn each piece skin side up and gently smash with a rolling pin or a wooden spoon until the cucumber begins to break apart. Cut into bite-size pieces. In a medium bowl, toss smashed cucumber with a pinch of salt. Refrigerate 10 minutes; drain excess liquid.
  2. Toss with green onions, rice vinegar, soy sauce, garlic, red pepper flakes. Serve immediately, garnished with sesame seeds.
