  • 8 medium apples, peeled and cut into 1-inch chunks
  • 3/4 cup honey
  • 1/4 cup bourbon whiskey
  • 1 vanilla bean, split, seeds scraped
  • 1 1/2 teaspoons fresh lemon juice
  • 2 cinnamon sticks

Instructions

  1. Toss all ingredients in 4- to 5-quart slow cooker. Cover and cook on low heat 6 to 8 hours or until apples are very tender.
  2. Remove the cover from the slow cooker and continue to cook on low heat for 2 to 3 hours, stirring occasionally until very thick. Remove and discard the cinnamon sticks and vanilla bean.
  3. If desired, purée the mixture in a blender or food processor for an ultra smooth texture.
  4. Spoon into a glass jar. Let cool, then cap and store in the refrigerator for up to 3 weeks.
